Chef Darwin Santa Maria teams up with JDub’s former brewmaster

If you were wondering what Darwin Santa Maria and Tom Harris were working on since leaving Darwin Brewing Co. and JDub’s, respectively, now we know. They have teamed up to create a food and beer collaboration: Cevichela Project.

“A new story is starting to write itself,” Santa Maria said.

They are doing a series of pop-up seafood dinners each Saturday at Cafe in the Park, 2010 Adams Lane in Payne Park, featuring beer brewed by Harris and food prepared by Santa Maria. The next dinner is Saturday at 7 p.m. Tickets are $63 per person and can be ordered by calling 941-361-3032.

The dinner will also be the debut for their Leche de Tigre IPA. They describe the beer — named after the Peruvian name for the citrus marinade used to make ceviche — as having notes of citrus, cilantro and pepper. It’s designed to pair with Santa Maria’s culinary creations.
